A Syrup-Soaked Black Forest Cake Layered with Fresh Cream relies on an airy structure to hold moisture. Whipping the eggs for a full seven minutes delivers the sole leavening needed. Once you bake three 8-inch (20 cm) rounds at 350°F (180°C), refrigerate the stacked dessert for four hours so the interior can absorb the cherry syrup.

The Chocolate Sponge

Large eggs need to weigh between 50 and 55 grams in their shells to provide the correct hydration for the batter. Cold eggs do not whip well. You can warm them by covering them with warm tap water for five minutes. Dry the shells with a towel before cracking them. Wet shells allow residual water to drip into the bowl and alter the batter structure.

You must beat the eggs and sugar for a full seven minutes. The mixture will turn pale and triple in volume. This trapped air provides the sole leavening for the cakes, as the recipe uses no baking powder. A short mixing time leaves the cakes flat and dense.

Sift the plain flour and Dutch processed cocoa powder together. This step minimizes the stirring required later. Dutch process cocoa provides a darker color and stronger chocolate taste, but regular unsweetened cocoa powder works fine if that is what you have.

Fold the dry ingredients gently using a rubber spatula or large metal spoon. Work with a light hand. Too much mixing deflates the delicate air bubbles you built into the eggs.

Divide the loose batter equally among the three prepared pans. Bake the cakes at 350°F (180°C) for 25 minutes, at which point the centers will bounce back when you press them.

Cherry Syrup

Jarred pitted morello cherries offer a softer texture than fresh fruit. The jarred fruit also brings extra liquid for the syrup. You can substitute thawed frozen pitted cherries mixed with their liquid and extra cherry juice if jarred cherries are unavailable.

Drain the jarred cherries over a bowl and reserve the juice. Mix a small amount of the cold juice with cornstarch to create a smooth slurry.

Boil the remaining juice with sugar until it forms a thin liquid. A thin consistency soaks properly into the baked cakes. A thick syrup will just sit on the surface and leave the inside dry. Stir in the traditional kirsch off the heat. Kirsch is a German cherry-flavored brandy. You can skip the alcohol and use extra reserved cherry juice instead.

Chocolate Curls

Melt dark chocolate in the microwave using twenty-second bursts. Stir the bowl thoroughly after each interval so the chocolate does not scorch in spots. Spread the melted chocolate thinly across a smooth baking pan and chill it in the refrigerator until the center is just set.

Tilt a metal scraper halfway between flat and straight up, then push it along the baking tray to form large Chocolate Curls. The texture of the chilled layer determines your results. Attempting to scrape chocolate that has set too firmly will cause the curls to break and splinter. Attempting to scrape a layer that remains overly soft will cause the curls to sag and fail to roll.

Decorating and Assembly

Heavy cream maintains its whipped structure much longer than plain pure cream. Whip the cream with soft icing sugar and vanilla extract until it holds firm peaks. Soft icing sugar contains a blend of pure icing sugar and cornflour to help stabilize the dairy. Pure icing sugar also works fine for the Whipped Cream.

Place the first cake layer on a large plate. Brush the top evenly with the warm Cherry Syrup.

Gently spread one cup of the whipped cream over the moistened sponge to create a layer about 0.5-inch (1 cm) thick. Scatter half of the well-drained morello cherries over the cream, making sure the fruit lays flat instead of piling up so the next cake sits evenly. Place the second layer on top, brush it with syrup, and repeat the process with another cup of cream and the remaining cherries.

Add the third cake layer to finish the stack. Cover the top and sides of the cake with the remaining cream. Use cold hands to press the small chocolate shavings onto the sides of the cake. Warm fingers melt the tiny pieces and streak the white frosting.

Resting and storage

The cake needs to rest in the refrigerator for at least four hours before you slice it. An overnight rest is even better. This time allows the liquid to fully saturate the dry sponge layers.

Pull the cake out of the refrigerator thirty minutes before serving to take the chill off the crumb. Keep a close eye on the cake on hot days so the icing does not melt in the room. The assembled cake lasts for three to four days in the refrigerator when loosely covered. The unstabilized cream will begin to lose its aeration after three days.

Method

Chocolate Sponge Cake Layers
1
Preheat the oven to 350°F (180°C) or 160°C fan.
2
Grease and line three 8-inch (20 cm) cake pans.
3
Sift the cocoa powder and plain flour together to combine the dry ingredients.
4
Beat the eggs on speed 6 for 30 seconds. While you beat the eggs, pour in the sugar over 45 seconds. Timer 0 min
5
Pour in the vanilla. Turn the mixer to speed 8 and whip the mixture for exactly 7 minutes. You must not cut this step short. The eggs will swell to three times their original size and turn a light shade. Timer 7 min
6
Fold the flour and cocoa mixture into the batter until it is just combined. Stop mixing while you can still spot some faint traces of unmixed flour. Work with a very light hand so you keep all that trapped air safely inside the bowl.
7
Pour the melted butter into the batter. Fold it gently until the mixture is just combined. Quit mixing the exact moment the final bits of dry powder disappear.
8
The batter will have a loose texture and flow easily from the bowl. Divide it equally among your three cake pans.
9
Bake the cakes for 25 minutes. The centers will bounce back when you press them. Timer 25 min
10
Off the heat, remove the pans from the oven and let the cakes cool in the pan for 10 minutes. Timer 10 min
11
Turn out the cakes onto wire cooling racks and let them cool completely.
Cherry Syrup
12
Drain the jar of cherries over a bowl and reserve the liquid.
13
Measure out 0.25 cup (60 ml) of the reserved cherry juice and mix it with the cornflour to form a thick slurry.
14
Place a medium pot over medium-low heat and add the sugar along with 1/3 cup of the reserved juice.
15
Bring the sugar and juice to a gentle simmer.
16
Add the cornflour mixture to the pot and stir it in. Let the liquid return to a simmer.
17
Cook the mixture for 1 minute. Stir the pot constantly. The liquid will gain a little body and turn into a light, runny syrup. Timer 1 min
18
Off the heat, remove the pot and stir in the kirsch.
19
Pour the hot syrup directly over the drained cherries and let the cherries in syrup cool completely.
Chocolate Curls
20
Snap the chocolate into small chunks. Place the pieces in the microwave to melt gently. Heat the chocolate for 20 seconds at a time. Stir the bowl after every interval. You will need exactly three rounds in the microwave. Timer 0 min
21
Pour the melted chocolate onto a smooth baking tray and spread it out thinly.
22
Refrigerate the chocolate for 3 to 4 minutes. Test a small patch with your finger to ensure the centre is just set. Timer 4 min
23
Hold a flat metal scraper tilted halfway between flat and straight up. If your kitchen is warm, refrigerate the scraper beforehand. Push it across the surface to scrape the chocolate into large curls and smaller shavings.
24
Place the scraped curls and shavings on a plate and refrigerate them so they hold their shape.
Whipped Cream
25
Add the cream, icing sugar, and vanilla to a large bowl. Beat the ingredients on high for 5 minutes. The mixture should stand up in firm points. Timer 5 min
26
Reserve 1.5 cups of the whipped cream in a separate container, cover it, and refrigerate it for later.
Assembly
27
Set your first sponge on a large plate or cake stand. Brush the top evenly with 0.25 cup of the cherry syrup.
28
Gently spread 1 cup of the whipped cream over the soaked cake to form a layer about 0.5-inch (1 cm) thick.
29
Drain your cherries well to remove the extra liquid, but skip patting them dry so they stay nice and juicy. Scatter half of the fruit evenly over the whipped cream. Just spread them out so they lay flat without piling up on each other.
30
Top with the second cake layer and brush it with another 0.25 cup of the cherry syrup.
31
Spread another 1 cup of cream over the second layer and top it with the remaining cherries.
32
Set the third cake layer over the cherries to finish building your stack.
33
Cover the top and sides of the cake in an even layer using the rest of your cream. Gather up the tiny chocolate pieces that splintered off while you made curls. Gently push these little flakes into the icing all around the bottom edge of the cake.
34
Pipe the reserved cream into swirls along the top border of the cake. Set a maraschino cherry onto each swirl. Pile the big chocolate curls right in the middle.
35
Rest the assembled cake in the fridge for 4 hours, or ideally overnight, so the layers can absorb the flavors. Timer 240 min
36
Pull the cake out of the fridge 30 minutes before you plan to cut into it and pass around the plates. Timer 30 min

Cook's notes

Substitutions

For an alcohol-free cake, omit the kirsch and use an equal amount of extra reserved cherry juice in your Cherry Syrup.

You can swap the Dutch processed cocoa powder for regular unsweetened cocoa powder, though the Dutch version provides a deeper color and more intense flavor.

Storage

Loosely cover the assembled cake and keep it in the refrigerator for up to three days before the unstabilized Whipped Cream begins to lose its aeration.

Serving

Pull the cake out of the refrigerator thirty minutes before slicing to take the chill off, but monitor it closely on hot days so the cream icing does not melt.

Common mistakes

Beat the eggs and sugar for exactly seven minutes so they swell to three times their original size. This step provides the only leavening for the batter, and cutting the time short will stop your cake from rising in the oven.

Fold the dry ingredients into the batter gently just until the flour disappears to prevent deflating the trapped air and creating a dense sponge.

Test the chilled chocolate with your finger to confirm it has only just set, as attempting to scrape an overly firm layer will cause your curls to break and splinter.

Techniques

Always sift your dry ingredients to remove stubborn lumps and minimize the amount of folding required for delicate egg batters.

Dip a sharp slicing knife into hot water and wipe the blade completely dry between cuts to get perfectly clean slices when serving layered cakes.

Frequently asked
I forgot to take my eggs out of the fridge. How can I warm them up quickly?

You can warm cold eggs by submerging them in warm tap water for five minutes. Be sure to dry the shells completely before cracking them so no residual water drips into your bowl and ruins the batter structure.

What caused my baked sponges to come out heavy and flat?

This usually happens if you do not beat the eggs and sugar for the full seven minutes, as the trapped air is the only leavening used in this recipe. Overmixing the batter when folding in the flour and cocoa powder will also deflate those delicate air bubbles.

What can I use if I cannot find jarred morello cherries?

You can substitute thawed frozen pitted cherries mixed with their liquid and a little extra cherry juice. Jarred or canned cherries are preferred because they offer a softer texture and provide the necessary liquid to build the Cherry Syrup.

Why are my Chocolate Curls splintering into tiny shards?

If your chocolate splinters and breaks, the melted layer stayed in the refrigerator for too much time. You only need to chill the tray for three to four minutes until the center is just set before you push your metal scraper through the chocolate.

Why do I need to rest the assembled cake for four hours before serving?

The assembled dessert needs at least four hours in the refrigerator so the baked cake can absorb the cherry liquid. Leaving it to chill overnight works even better to completely soak every tier.

How do I get clean, professional-looking slices when serving a layered cake?

Dip a sharp slicing knife into hot water to warm the metal. Wipe the blade completely dry with a towel between every cut to prevent dragging the frosting through the crumb.

Can I freeze this dessert after assembling it?

Avoid putting this finished cake in the freezer. As the fresh whipped cream thaws, it often breaks apart and takes on a grainy, watery texture. You should just keep the dessert loosely covered in the fridge, where it will hold up well for three to four days.
