The Cake Pan and Biscuit Crust

You must prepare the pan carefully to release the dessert intact. Turn the base of your 9-inch (22 cm) Cake Pan upside down before locking it into the outer ring. This removes the deep lip and makes sliding the finished dessert off the base much easier.

Line the bottom with baking paper. Leave the extra paper hanging out past the edges of the pan. You will use this overhang as handles later.

Next, blitz the cream cheese, whipping cream, superfine white sugar, and liquid gelatin mixture. The Mango Jelly Topping

Refrigerate the cheesecake for at least 3 hours before adding the jelly layer. The surface must be firm to support the liquid.

Mix the reserved mango puree with lemon juice and dissolved gelatin. Pour this liquid over your chilled cake. Tilt the pan gently to spread the topping evenly across the surface.

  • 2 tbsp white sugar
  • 5 oz plain sweet biscuits, about 17 crackers, such as Marie or graham crackers

Mango

  • 1.4 lb mango flesh, about 2 large mangoes

Cheesecake Filling

  • 0.67 cup superfine white sugar
  • 4.5 tsp gelatin powder
  • 0.5 cup cold tap water
  • 1 lb cream cheese, softened, about 2 blocks
  • 1.25 cup whipping cream

Mango Jelly Topping

  • 1 tbsp lemon juice
  • 0.75 tsp gelatin powder
  • 0.25 cup cold tap water

Garnish

  • 1 tbsp white sugar
  • 1.25 cup whipping cream
  • 1 large mango, cut into cubes
  • 2 passionfruit
  • 1 tsp vanilla extract

Method

Cake Pan

Prepare a 9-inch (22 cm) springform pan. Turn the pan base so it sits UPSIDE DOWN.

Place baking paper over the bottom. Fasten the ring to secure the baking paper. Keep the extra parchment sticking out past the edges.

Biscuit Crust

Put the plain sweet biscuits in a blender. Blitz the crackers until you see fine crumbs.
